Asparagus and Greens with Farro



  • 1 cup uncooked farro
  • 3 cups low sodium vegetable broth
  • 1 bunch asparagus
  • olive oil
  • salt & pepper
  • juice of 1 lemon
  • 1/4 cup sliced almonds
  • 3 cups spring mix greens


  1. In a medium saucepan, bring 3 cups broth to a boil.  Add farro.  Cover, reduce heat, and simmer 30 minutes (or as the package directs).  Drain.
  2. Preheat oven to 400 degrees.
  3. Drizzle asparagus with olive oil, salt, and pepper.  Roast for 10 minutes.
  4. Place greens on a large platter.  Top with farro and roasted asparagus.  Drizzle with fresh lemon juice.  Sprinkle with sliced almonds.
