INGREDIENTS – BURGERS
- 1/2 cup canned pumpkin
- 1/4 cup yellow onion, chopped
- 2 garlic cloves, minced
- 3/4 cup oats
- 2 teaspoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 teaspoons cumin
- 1 teaspoon salt
- 1 (15-ounce) can no salt added black beans, drained and rinsed
Add the pumpkin, onion, garlic, oats, olive oil, and spices to a food processor. Add half the black beans and pulse several times. Add the second half of the black beans and pulse several times until mixture is combined but still slightly chunky.
Refrigerate mixture for 20 minutes, until firm.
Form the mixture into 6 patties. Keeping them thin and uniform helps the cooking process. Put them back in the refrigerator while you heat a skillet. Use a black iron skillet, if you have it! It gives the patties a great crunch on the outside!
Add a tablespoon of olive oil or avocado oil to the skillet over medium heat. Cook the patties about 8 minutes per side.
Serve with your favorite toppings: avocado, tomato, red onion, lettuce. No bun, mayo, or cheese allowed, though!
INGREDIENTS – FRIES
- 2 sweet potatoes, scrubbed, cut into wedges
- olive oil
Preheat the oven to 350 degrees.
Drizzle olive oil over sweet potato wedges. Mix. Arrange in a single layer on a baking sheet.
Sprinkle liberally with the spices.
Bake 30 minutes.
