- 1 (15-ounce) can no salt added black beans, rinsed and drained
- 1 cup frozen corn, thawed and drained
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, quartered
- 1/2 cup fresh cilantro, chopped
- 2 green onions, diced
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 3 tablespoons fresh lime juice
- 2 tablespoons balsamic vinegar
- Mix all ingredients in a bowl.
- Refrigerate 2-3 hours.
- Serve as is, or tossed with mixed greens.
