- 12 medium strawberries
- 1 cup coconut water
- 6 pitted dates
- 2 cups water
- Combine dates and 2 cups water in a saucepan. Boil for 10 minutes with the lid on. Remove from heat, and cool for 15 minutes with the lid off.
- Place dates and 1/4 cup of the liquid in a food processor. Process until smooth, scraping down sides as necessary.
- Add strawberries and coconut water. Process until smooth, scraping down sides as necessary.
- Pour into 8 popsicle molds.
- Freeze 4 hours.
If you have chia seeds on hand, throw in a few tablespoons!
